Known for being the most tender part of the animal, the hanger tender is a flavour-packed cut from along the plate, often marinated and grilled.
厚裙肉为牛胸腔前面悬挂的一块肉。整块肉为不规则椭圆形,带有明显的肌肉纹理,脂肪较少,牛肉味丰富。此部位比较稀少,一头牛只有一条厚裙肉。适合做成烧肉,是烧肉店菜单上常见的料理。或是做成厚裙牛排。

- If you don't plan on consuming your Wagyu right away, store the vacuum-sealed package in your freezer upon delivery. The meat can remain frozen for up to 12 months, but we doubt it will last that long!
- To thaw the beef, place the vacuum-sealed package in the refrigerator for up to 48 hours. This is the best method for preserving the natural juices and flavour of the Wagyu.
- If you're in a hurry, submerge the vacuum-sealed package in a bowl of cold water for a few hours to thaw.
